GREEN BEANS WITH NUTS
Nuts are a popular ingredient in Georgian cuisine. In this recipe we will show how to make a delicious summer dish of green beans with nuts (Georgian: მწვანე ლობიო ნიგვზით)
Green Beans! 1 kilo.
200 grams of walnuts, 1 large onion, 3 cloves of garlic, 70 grams of fresh green coriander, 80 grams of fresh parsley, half tsp of dried coriander, half tsp of dried red pepper, half tsp black pepper, third tsp of saffron, half spoon of dried Blue Fenugreek and 4 tbs of white wine vinegar, 1 tbs of oil and 1 tbs of salt.
Preparation – beans:
Wash green beans, cut off ends and cook on a medium heat for about 40 minutes. Drain beans thoroughly.
Preparation – walnut mixture:
Add the walnuts, salt spices and garlic to a mortar and crush ingredients with a pestle. Then finely chop the coriander.
Add the coriander and 1 tbs of oil to the mixture in the mortar and crush using the pestle.
Add 4 tbs of white wine vinegar and stir with a spoon.
Chop the parsley (leaving 10 grams for garnish), onion (leave one third for garnish) and cooked green beans and add to a mixing bowl with the nut mixture.
Mix ingredients with a wooden spoon until they look like the mixture in the picture below.
The mixture can be presented in many ways. Georgians often decorate it with pomegranate seeds. We chose to hand mold the green beans and nuts mixture into small balls and garnish with chopped parsley and onion.
