ZUCCHINI WITH WALNUTS
Dishes made with zucchini (also called courgette) are popular in Georgia. There are many variations and in this family recipe we show how to make fried zucchini with a spicy walnut sauce.
Ingredients: 1 kilo of zucchini, 400 grams of walnuts, 50 grams of fresh green coriander, 50 grams of fresh parsley, 1 medium sized onion, 3 large cloves of garlic, 1 or 2 hot green peppers (optional), three-quarter tsp of dried coriander, three-quarter tsp of dried marigold, half tsp of blue fenugreek, 1 level tsp of hot red pepper (or less, dependent upon taste), 10 tbs of vegetable oil (for frying zucchini), 50 ml of boiled, cooled water, 3 tbs of white wine vinegar, and salt (according to taste).
Preparation: Slice the zucchini (at least 1 cm thick) and add the slices to a pan containing oil (depending on the size of pan used it may be necessary to repeat the process). Cover and fry on a medium heat. When one side is done, turn over and continue to fry (uncovered) until cooked. Repeat until of all the zucchini slices have been fried.
Add the fried zucchini to a bowl and allow to cool.
Grind the garlic and walnuts together (we used a meat grinder) and add to a bowl. Chop the onion, fresh green coriander and parsley. Slice the hot green peppers and add to the bowl.
Add the dried coriander, dried marigold, blue fenugreek, hot red pepper, and salt (amount dependent upon taste). Add 50 ml of boiled, cooled water and 3 tbs of white wine vinegar. Mix thoroughly.
Serving (option 1): Add the fried zucchini to the bowl and carefully mix. Serve cold.
Serving (option 2): Add the spicy walnut mixture to individual zucchini slices. Serve cold.
