INTRODUCTION TO GEORGIAN SALADS
Georgia is blessed with wonderful fresh vegetables, ideal for making delicious, refreshing salads.
Ingredients. The basic ingredients of a Georgian salad consist of tomatoes, fresh parsley, purple basil, green peppers, red onion and cucumbers. Cheese (Georgian Imeritian) or walnuts can also be added.
You will also need ground coriander, salt, ground red pepper and ground marigold if you want to make a Georgian Salad with Nuts.
Preparation. Chop vegetables (and cheese if you want cheese) as shown in the photograph below.
If you are making a Georgian Salad with Nuts, remove shells and crush the nuts, together with one clove of garlic, a pinch of marigold, a pinch of ground coriander and a pinch of salt, using a mortar and pestle.
Add one teaspoon of wine vinegar, one teaspoon of water (or more depending on taste) and mix into a paste.
Place prepared ingredients in a salad bowl. Add a sprinkling of wine vinegar or oil, according to taste.
