Kharsho (Georgian: ხარშო), also known as Kharcho, is a traditional Georgian dish, usually made with beef or chicken but can also be made with other meats. It can be made with walnuts and with or without rice. In this recipe we show how to make Kharsho with beef and rice.
Ingredients: 700 grams of beef, 100 grams of rice, 2 large onions, 2 bay leaves, 20 grams of fresh green coriander, 1 heaped tbs of tomato puree, 2 cloves of garlic, 1 tbs of red pepper, 1.7 liters of water, 5 tbs of oil, and salt (amount dependent upon personal preference).
Preparation: Chop the onions and add to a deep pan with 5 tbs of oil. Fry on a medium heat for 3-4 minutes, stirring occasionally.
Cut the beef into small to medium chunks and add to the pan. Stir and fry (covered) for 1 hour on a low to medium heat. After 20 minutes add 100 ml of water and a further 100 ml of water after 40 minutes. Stir frequently. The liquid will reduce.
Add the rice.
Add 1.5 liters of water and 2 bay leaves. Stir and cook on a medium heat for 25 minutes, stirring occasionally.
Crush the garlic and add to the pan, together with 1 tbs of red pepper and salt.
Continue to cook on a medium heat (uncovered) for a further 15 minutes.
Chop the coriander and add to the pan, together with 1 tbs of tomato puree. Stir and continue to cook for a further 5 minutes and then remove from the heat.
Serving: Serve hot.
