MTSKHETURI GVEZELI – MEAT PASTRY

In this recipe we will show how to make a popular Georgian dish called Mtskheturi Gvezeli (Georgian: მცხეთური ღვეზელი). It can be filled with meat (beef or a pork/beef mix), potato, mushrooms or cheese. We have made the meat (pork/beef mix) version.

Ingredients (around 10 servings)Dough – 1 kilo of flour (800 grams for the dough and 200 grams for dusting and kneading) , 1 egg, 400 ml of warm water, 25 grams of dry active yeast and 1 tsp of salt; Filling – 500 grams of ground beef and pork mix, 100 grams of rice, salt, 1 tsp of  black pepper, 1 tsp dried Blue Fenugreek, 2 onions, 1 egg and finely chopped parsley (optional – we did not use it). Cooking – 500 ml of oil.

Preparation (dough): Add 800 grams of flour, 25 grams of yeast, half tsp salt and 1 egg to a mixing bowl.

Add 400 ml of warm water.

Mix by hand until you have formed a ball of dough.

Cover the dough and leave in a warm place for 1 hour to allow the dough to rise.

Add 200 grams of flour and knead the dough until it is fairly firm. Dust a work surface with flour and divide the dough into pieces.

Preparation (filling): Finely chop the onions and fry until golden brown.

Add the beef and pork mix, black pepper and Blue Fenugreek to a pan with 40 ml of oil and stir frequently for 5-6 minutes.

Boil the rice with 1 tsp of salt. Add the rice, together with the cooked beef and pork mix and 1 egg to a mixing bowl.

Stir the ingredients until thoroughly mixed.

Roll out each ball of dough.

Add the filling to the center of each piece of dough, fold and seal.

Fry in 1 cm deep hot oil until golden brown.

Serving: Serve hot.
