BLACKBERRY AND GREEN GRAPE SAUCE
Wild blackberries can be found throughout Georgia’s mountain areas and are used as an ingredient mainly in western Georgia cuisine. In this recipe we show how to make a blackberry and green grape sauce that is used in Georgia only for roast or fried chicken dishes. Green grapes are young, unripe grapes.
Ingredients: 400 grams of blackberries, 200 grams of green, unripe grapes, 2 cloves of garlic, 1 tsp of hot red pepper, one third tsp of dried coriander, 20 grams of fresh green coriander, and salt.
Preparation: Remove stalks from the grapes and use a mortar and pestle to crush the grapes.
Pour the juice into a bowl and use a strainer to extract any remaining juice from the pulp and skins.
Crush the blackberries with the back of a spoon.
Add the blackberry juice to the grape juice and use a strainer to extract any remaining juice from the blackberry pulp.
Chop the fresh green coriander and add to a mortar, together with 2 cloves of garlic, 1 tsp of hot red pepper, one third tsp of dried coriander, and salt. Crush the ingredients with a pestle.
Add the crushed ingredients to the blackberry and grape juice.
Serving: Serve the sauce with roast or fried chicken (e.g. chicken tabaka).
