CAULIFLOWER WITH MAYONNAISE AND SOUR CREAM
Mayonnaise and sour cream are popular ingredients in Georgian cuisine. In this family recipe we show how to make a delicious spicy mayonnaise and sour cream sauce for a fried cauliflower dish. Our cauliflower is coated with cornmeal, which is traditionally used in Georgia to make Mchadi and Gomi.
Ingredients: 1 medium sized cauliflower, 2 eggs, 150 grams of mayonnaise, 150 grams of sour cream, 10 cloves of garlic, 200 grams of fine cornmeal, 20 grams of fresh parsley, 1 tsp of dried coriander, 1 tsp of black pepper, 1 tsp of hot red pepper, 100 ml of oil, and salt (amount dependent upon personal preference).
Preparation: Add the garlic cloves, dried coriander, black pepper, red pepper and salt, together with 50 ml of water, to a mortar and use a pestle to crush and blend the ingredients.
Transfer the crushed garlic and spices to a mixing bowl and add chopped parsley, mayonnaise and sour cream.
Mix thoroughly with a wooden spoon.
Wash and prepare the cauliflower. Add to a deep pot of salted water and boil for 15 minutes. Drain using a colander and add to a mixing bowl.
Add the eggs to a mixing bowl with a sprinkling of salt. Beat the eggs with a wooden spoon.
Add the cauliflower to the beaten eggs. Mix carefully.
Add the cornmeal to a plate and coat each piece of cauliflower with the cornmeal.
Add the cornmeal coated cauliflower to a pan containing 100 ml of hot oil. Fry uncovered on a medium heat until the cauliflower browns, turning as necessary to ensure an even color. Do not overcook as the cauliflower should be crunchy, not soggy.
Serving: Pour the spicy mayonnaise/sour cream sauce onto the cauliflower and serve immediately.
